Ingredients:
- 500g of assorted meat (beef, goat meat, or chicken)
- 2-3 tablespoons of ground pepper (scotch bonnet or habanero)
- 2-3 tablespoons of ground crayfish
- 1 medium-sized onion, chopped
- 2-3 seasoning cubes
- Salt to taste
- 2-3 cups of water or beef/chicken stock
- Optional: chopped vegetables like scent leaves, uziza leaves, or spinach
Instructions:
1. In a large pot, bring the water or stock to a gentle boil over medium heat.
2. Add the assorted meats to the pot. If using tough meats like beef or goat meat, you may want to pre-cook them until partially tender before adding to the pot.
3. Add the chopped onions, ground pepper, ground crayfish, and seasoning cubes to the pot. Stir well to combine.
4. Allow the soup to simmer for about 20-30 minutes, or until the meats are fully cooked and tender.
5. Taste the soup and adjust the seasoning with salt if necessary.
6. If using chopped vegetables, add them to the pot and allow to simmer for an additional 5-10 minutes until they are wilted and tender.
7. Once everything is cooked to your liking and the flavors have melded together, remove from heat.
8. Serve hot in bowls, and enjoy as is or with some freshly baked bread or boiled yam.
Pepper soup is great for warming up on chilly days or for soothing a cold. Enjoy!
